Manuel Humberto Moraga Gutiérrez is a seventh generation winemaker who practices the same wine making techniques that were used by his ancestors.
The first vines of the region were planted in 1766. His ancestor Francisco Gutierrez Gutierrez came to the region in search of gold and began growing wine.
Grapes are handpicked, destemmed and fermented in open rauli barrel with native yeasts and without temperature control. Occasional pump overs are performed. After a 10 to 14-day primary fermentation, the wine is transfered to Ecotanks and settled twice as a natural, gravity filtration. When it is finished, it goes into bottle.
